Peridot Coupage is EU Certified 100% Organic so there are no pesticides, chemicals, fertilisers or other harmful artificial chemicals used meaning the olives are unchanged, pure and as nature intended. Below is the Spanish CAAE Certification symbol which Peridot Coupage displays on its back label.

The three varieties of olives that combine so perfectly to make Peridot Coupage are harvested in November thus making it an early harvest Extra Virgin Olive Oil. The earlier the olives are harvested the better as this maximises all the natural flavour, taste and health benefits associated with a high quality gourmet Extra Virgin Olive Oil.

The organic olives are processed and pressed cold under controlled temperatures of -27°C. Another key indicator of the quality of an Extra Virgin Olive Oil is its acidity level and the acidity level of Peridot Coupage, harvest 20/21, is 0.19%. Extra Virgin Olive Oils must have an acidity level of lower than 0.8%. A low acidity level such as Peridot Coupage indicates that the Extra Virgin Olive Oil has come from healthy and fresh olives. Furthermore because the acidity level of Peridot Coupage is so low, it is beautifully smooth on the taste buds unlike some Extra Virgin Olive Oils which can be slightly harsh on the palate.
